One early clinical study used an infusion from a different eggplant cultivar and saw a small, short-lived dip in cholesterol. The tested cultivar differed from this Thai variety.
For Thai round eggplant nutrition, the fruit brings manganese, fiber, and potassium. This is the pale, golf-ball-sized eggplant Thais eat raw — crunchy, seedy, and bracingly bitter — dunked straight into a bowl of chili dip. Thai round eggplant — มะเขือเปราะ, ma-kua-praw.
