Lemongrass's Citral Fought Candida Biofilm in the Lab

Lemongrass — ตะไคร้ (ta-khrai) — Cymbopogon citratus.
Lemongrass — tah-krai. In cell-culture studies, lemongrass and its aromatic compound citral cut back Candida albicans biofilm. The stalk is the part you eat. It also carries manganese, which supports normal bone formation, energy metabolism, and antioxidant enzyme function. Yam Ta-khrai tosses thin-sliced stalks with lime, chili, and herbs to cut the richness of fried fish. Gai Tod Ta-khrai buries golden fried chicken under a crispy mountain of deep-fried lemongrass shreds, dipped in sweet chili sauce. Lemongrass — ตะไคร้, ta-krai. Bruise the pale lower stalk and it releases a bright, lemony oil with none of a lemon's sourness. The tender heart of that stalk is what you slice into salads and pound into curry paste. Trim the tough green tops for the stockpot.
