Djenkol is southern Thailand's most notorious bean — a garlicky, sulfur reek and a real caution to match. It is rich in djenkolic acid, a natural compound that can form sharp crystals in your kidneys; eat too many, above all raw, and it can trigger stabbing back pain and even kidney damage. Boiling softens the smell but not the risk, so keep to small portions of well-cooked beans and drink plenty of water.

Luk Niang kap Nam Prik (ลูกเนียง)

In southern Thailand the young seeds, luk niang, get peeled and eaten raw, dipped straight into fiery nam prik, a few at a time, with plenty of water.

Luk Niang Tom kap Maprao (Boiled Djenkol with Coconut) (ลูกเนียง)

The mature seeds, luk niang are boiled hard until the smell settles, then eaten with salt and grated coconut, always in a small portion.
